I first met Beth and Ian on FaceTime after they found my website while looking for a natural-style documentary wedding photographer in Lancashire. We started with what they didn’t want: Posed, awkward photos. And we connected straight away.

Any Lancashire wedding photographer would love to photograph a wedding at this rustic Lancashire wedding venue. So being given complete freedom to capture the day in my natural documentary style and being a part of this festival vibes, and a super loved-up wedding was a lot of fun!

Festival-themed Rustic Boho Wedding Photography Story

Hi, we’re Mr and Mrs Squires (Ian and Beth). I’m an Openreach engineer, and Beth is a primary school teacher. We live in Atherton, Greater Manchester. And this is our Simply Fields wedding photography story…

His version:

In the world of online dating, I like to say we met the traditional way of a boy meeting a girl in a nightclub. We were both on nights out that were never meant to happen.

It was the 10th of June 2016 – the opening night of the Euro’s and a friend from work invited me out to Manchester. Long story short, I lost my mates and ended up in Dive Bar precisely at the right moment.

I saw Beth from across the dancefloor; she was wearing this jumpsuit that my eyes were drawn to. I shuffled my way across the dancefloor to ask if she wanted a drink only to find out the last orders had been called so I invited her back to mine and the rest is history…

Her version:

I was having a cute girly evening (you know the one) bottle of wine, the latest gossip and your best girl pal then you pour the last glass of wine and suddenly you don’t want the night to end. So it didn’t.

We opened another bottle, turned up the tunes and started getting ready for a night out. Before we knew it we found ourselves smack bang in the middle of the jam-packed, sweaty Dive Bar in town.

I was playing wing-woman to my friend and I just remember this one bloke was trying to give me his number and I was trying my best to politely turn it down.

Out of the corner of my eye was this guy who was giving me the eye- so much more my type so I made a quick escape and made my way over to him. And the rest is history…

A New York Proposal

The proposal was 12 months in the making if not longer. We had joked about the idea of going to New York for Beth’s 30th years ago and when it was getting closer to the time, I thought why the hell not?

As cliché as it sounds, I also thought, what a place to propose. I booked New York for 10 days over Christmas and New Year 2019. Getting the ring through security and the lead-up to the moment could have been less tense but you know, it’s kind of a big deal.

Picture the moment. You’re in a rooftop bar, and looking up at the Empire State Building. You know the script, “so babe, we’ve been together for 4 years now, and you know how much I love you”, I get down on one knee. Beth’s response was – “get up you d**k”. Moment killer.

So I just went with it and popped the question. It was a good 60 seconds before I heard a response of “YES. YES. OF COURSE YES!”

All of our family and close friends knew I was planning this and it was a tense wait for them to hear if Beth had said yes but it was the best way to celebrate Christmas morning face-timing everyone grinning like Cheshire cats from our hotel room.

Simply Fields Wedding and Events Venue

We got married on the 12th of August. What a hell of a couple of years it had been. I mean, a global pandemic, both of us starting new jobs and the loss of a parent just to name a few.

When lockdown eased slightly in June 2020, we just happened to stumble across a venue that we hadn’t been able to stop thinking about. It just spoke to me and when I showed Ian the socials, he loved it too.

We saw that Simply Fields was holding an open day, and I knew, we just had to go along to their wedding fayre.

We viewed Simply Fields on a gorgeous sunny summer’s day and when we parked up on the grass and stepped out, the fresh breeze and beautiful views hit us.

Wedding Planning

On arrival Lindsay (whom we felt completely at ease with) greeted us. We were completely clueless and didn’t know where to start with planning a wedding but she guided us through every step of the way and had so much advice to give.

We told her that we had never been one for shopping around and that when you know, you know. This was honestly really the case with our venue.

We loved everything. We felt so at ease there and I remember looking around at the empty marque and imagining the happiness I would feel here with all of our nearest and dearest.

After bonding with Lindsay over our love of gin and New York, it was a 100% yes from us. We booked our wedding venue there and then.

Rustic Wedding Theme at Simply Fields

We didn’t really have a theme as such but we definitely went with the rustic wedding vibe as it just complimented the venue so perfectly. During the lockdown, I got quite crafty and ended up making a lot of the décor myself.

I always knew I wanted everything at my wedding to be meaningful and carefully handpicked. Seeing it all come together on the day and knowing how much love and care had gone into every detail was definitely worth the hours of labour!

Small Wedding Guest List

We kept our guest list relatively small -50 guests for the whole day and I’m so glad we did. We didn’t feel we needed any more or any less- it was a perfect day with our nearest and dearest.

I had 4 gorgeous bridesmaids in sage dresses; my best friends and sisters. Ian had his best friend as his right-hand man and his brother as his usher.

Wedding Dress

When my mum told me that she really wanted to buy my wedding dress for me I knew we would be sharing this special task just the two of us.

My dress was from Cheadle Bride and I know it sounds ridiculous but I couldn’t even tell you the designer or make! I just knew it was the one because my mum cried and I got all the feels.

Bridal Party

For a while, I was torn between buying or renting my suit. In the end, I decided to buy it as I found a really nice suit online that wasn’t too bad in terms of cost. I knew the style I wanted which was navy blue with a brown tweed waistcoat and brown shoes to finish.

I wanted to distinguish between the groom and groomsman by wearing a dickie bow and the groomsman wearing a tie. The colour matched the bridesmaid’s dresses, which were sage green.

Our nephew Theo was only a few weeks old and therefore the cutest little pageboy that you ever seen. I couldn’t get over how adorable he looked when he made his grand reveal to me whilst I was getting ready the morning of the wedding.


Ryan was the first and only person we spoke to in regards to the entertainment for our wedding: because we just knew from the very first meeting, that he would be perfect for our special day.

During the day, he went above and beyond from checking that guests were ok, to making sure I ate something in the evening. Not to mention the amazing vibe that he created making sure there was music for everyone’s tastes.

We couldn’t believe it when Ryan took us to one side early evening and suggested that we could have our first dance outside if we wanted to have a moment we would never forget in the fields with a beautiful sunset and all our loved ones close by.

My brother Ben and his fiancé Elly are professional singers and we also knew we just had to have them perform a set for everyone.

We put together a playlist of swing songs, and Ben threw in a couple of surprises that he knew would be perfect for us. The two of them have so much talent and it was so special to have them play such an important role in our day.

Standout Moments from the Wedding at Simply Fields

There were a few stand-out moments that you look back on and think wow. Me, being the groom, I woke up late and almost missed breakfast due to too many drinks and cigars the night before.

For Beth, the moment her Dad walked in and saw her for the first time in her wedding dress is a moment she’ll never forget.

When the ceremony was over, we had planned to go for a little drive with Wes in the camper van we hired. We only drove half a mile down the country lane and Wes shouted PULL OVER!

There was a stunning jet-black Shire horse obviously wanting in on the wedding photo action and we got some great shots with the horse which made it into the wedding album. You couldn’t have planned it.

Just before the evening entertainment kicked off, we were outside when a voice drifted out of the open marquee doors.

Elly was singing a beautifully haunting version of ‘Can’t Help Falling in Love with You’. The venue suddenly went quiet, everything slowed down and Ian and I only had eyes for each other. It was such a special moment.

In the evening we were blessed with a beautiful sunset so we arranged with Ryan to do our first dance outside, which isn’t something everyone gets the chance to do.

To finish the night, we had our dearest family and friends staying over at Simply Fields in 7 gorgeous bell tents and that was so special to say goodnight knowing our loved ones were still so close by.

Wedding Planning Tips

We would say just have fun and don’t try to overcomplicate things. On the day, what will be will be, there’s no point stressing about the what-ifs and plans A, B and C.

It’s very easy to get caught up in getting pictures and having conversations with your guests so make sure you get away or have time by yourselves even if it’s just for 30 minutes.

Our Simply Fileds wedding photography experience was professional, stress-free and a lot of fun from start to finish.

We chose Wes because we felt a real connection with him and over the many months of wedding planning we built a relationship through FaceTime calls and emails, which meant we had complete trust in him when it came to the big day.

Wes listened to us, understood us and guided us with his years of expertise and knowledge. We’ve already recommended him to all our family and friends. A big guy with an even bigger heart.

Favourite picture?

They’re all stunning but if we had to choose one, it would be the photo of us walking off into the sunset. It’s an image that really does say 1000 words. We have it set as our wallpapers on our phones.

Would you recommend Wes Simpson Weddings to family and friends?

110% YES. We loved Wes’s documentary style of wedding photography as it captures the moments that we missed or you wouldn’t necessarily remember. Not everyone will like that style, but for us it was perfect.

When you look through our wedding album there is a story being told. Our story. We are extremely proud of it. The attention to detail, design and craftsmanship are outstanding.

Upon viewing the album design, we decided to upgrade to the Autograph collection and proudly added extra pages to complete our beautiful story.
